Three Bean Soup

Ingredients

  • 2 Tbsp. butter or margarine
  • 1 cup onion (chopped)
  • 1 cup green pepper (chopped)
  • 1/2 cup celery (finely chopped)
  • 1/2 cup carrots (finely chopped)
  • 1/2 cup parsley (finely chopped)
  • 1 garlic clove
  • 1 16 oz. can Joan of Arc ® Butter Beans
  • 1 16 oz. can Joan of Arc ® Spicy Chili Beans
  • 1 16 oz. can Joan of Arc ® Light Red Kidney Beans
  • 5 cups water
  • 2 whole bay leaves ((remove before serving))
  • 1/4 tsp. Dried marjoram leaves
  • 1/4 tsp. basil
  • 1 pinch savory
  • 1 pinch thyme
  • 12 whole vegetable cubes
  • 1 cup fresh tomatoes (chopped)

Directions

Saut é in butter or margarine the following: onions, green peppers, celery, carrots, parsley, and garlic. Add the rest of the ingredients to the vegetables and simmer for 20 minutes to blend flavors.
